Coconut Curried Vegetables with Tofu Prep time: 25 mins Cook time: 15 mins Total time: 40 mins Serves: 6 Ingredients 1 (14 oz) can coconut milk 1/2 tsp brown sugar 1 ½ tsp curry powder 1 ½ tsp fresh minced ginger 4 cloves garlic, peeled and minced 2 tsp chile powder 1 medium sweet potato, peeled and cut into 1-inch cubes (may sub butternut squash) 1 ½ cups chopped cauliflower 1 lb extra firm tofu, cut into 3/4-inch cubes 4 cups froz. (thawed) chopped spinach 1/8 cup braggs aminos dash of red pepper flakes salt to taste 1/3 cup sliced almonds 1/3 cup raisins Instructions In a large heavy saucepan over medium heat, combine coconut milk, brown sugar, curry powder, ginger, garlic, and chile paste. Bring to a boil, and then reduce to a simmer. Stir in sweet potato and cauliflower, cover, and cook about 10 minutes, stirring occasionally, until the veggies are just tender. Remember they will continue to cook a bit even after you remove them from the heat, so you’ll want to leave them a little undercooked. Add in the tofu with the vegetables, or if you prefer your tofu crisp, brown it separately in a sauté pan with a little oil while the vegetables are cooking. Heat a splash of coconut oil, olive oil, or canola oil in a large skillet over medium heat. Add chopped spinach and thaw. Transfer to pot of coconut curry. Add browned tofu if you cooked this separately. Stir in soy sauce and a dash of red pepper flakes. Taste and add salt as needed. Ladle a generous spoonful of curried tofu and vegetables on to your plate, and sprinkle with a couple tablespoons each almonds and currants. Yummm!

Recipe - Fudge

Try this raw food diet fudge recipe for a truly healthful alternative to this favorite candy.
Recipe Ingredients
2 cups soaked cashews
1 cup pitted dates
1 cup soaked raisins
4 tablespoons carob powder
1 cup water
1 cup ground flax seeds
1 cup walnut pieces
Recipe Directions
Blend soaked cashews, dates, raisins, carob powder, and water together in food processor or heavy-duty blender (you can also use a Champion or Green Power juicer with blank plate on).
Pour into a bowl. Measure one cup of flax seeds and grind in coffee grounder (you will have to grind 1/2 cup at a time).
Mix in with the chocolate mixture along with the walnut pieces.
Spread in a rectangular tin, then freeze for a few hours. Cut in rectangles, then serve!

Recipe - HOT CHOCOLATE
HOT CHOCOLATE
Recipe Ingredients
3/4 cup *pure coconut milk
1/4 cup water
1/2 tablespoon carob powder
Raw honey to taste (about 1/2 teaspoon)
*Don't be alarmed about coconuts! They are a powerhouse of nutrition that won't make you fat. Coconut oil is rich in medium chain fatty acids (MCFA) which is a type of saturated fat that the body does not store as fat but rather burns as energy fuel.
Recipe Directions
Raw Honey Combine coconut milk, water and carob powder. Blend with a wire whisk, heat on stove top or microwave.
Add honey to taste.
I love coconut! It is a lifesaver when on this kind of food restrictive diet.
This hot chocolate quite good. I forgot where I got the recipe.
What's wrong?
I knew something was up with my health. My body wasn't my own anymore. A couple years ago, I had figured out (on my own) that wheat wasn't doing me any favors.
Only eating wheat 1 day a week fixed some but not all of my problems. Now after getting some allergy testing. It looks like I shouldn't be eating any grains. On top of that no dairy or eggs. This may change as my gut heals or it may not.
In the meantime I'm stuck with an expensive and time consuming way to eat.
